Spaghetti Bolognaise (not)

The "real" spaghetti bolognaise is a specific recipe, prepared with love, affection and a very reduced tomato sauce. This is my quick version. Should take less than half an hour. Quantiites are approximate. As listed, a good size meal meal for one.


4oz dry spaghetti or other pasta
One onion
One clove of garlic*
Oil for frying
8oz mince (Beef usually, I used turkey)
Handful of green olives*
Half a jar of green pesto*
Can of tomatoes
Tomato puree


If you have tinned whole tomatoes, blitz with a and held blender or chop finely. Use tinned chopped tomatoes as they are. Chop the onion and garlic.
Heat a tablespoon or two, (or more) of oil and fry the onions gently for 5 minutes or so until soft. Add the garlic and fry for another few minutes. Add the mince and keep frying for 5 minutes more. Add the tomatoes, and the olives, bring to the boil and simmer away for 20 minutes.
While this is simmering, cook the pasta. Boil a few pints of water, add the pasta and keep boiling until the pasta is cooked to your liking. Should take less than ten minutes, taste a bit every now and then until you like it then drain off the water.
When the sauce has finished simmering, stir in the pesto. Add salt and pepper to taste. Put the pasta on a plate and pour on the sauce. Grate nutmeg and parmesan (or other cheese) to finish.
